The lemon cake
INGREDIENTS LEMON CAKE
- 3 eggs
- 1 cup (220g) sugar
- zest of 3 lemons
- 1/2 cup (125 ml) squeezed lemon (Sicilian or Tahiti)
- 2 cups (256g) all-purpose flour
- 1/2 cup (125 ml) oil
- 1/2 cup (125 ml) milk
- 1 tablespoon chemical yeast

PREPARATION
Mix the eggs and sugar for 2 minutes or until it becomes a uniform and airy mixture.
Then, add the oil, milk, zest and lemon juice.

Then transfer the dough to a greased baking sheet and bake in a preheated oven at 180°C for 40 minutes or until the toothpick comes out clean.
For the frosting (OPTIONAL)
- 8 tablespoon of sugar
- Juice of 1/2 lemon

Then mix the sugar and lemon until a uniform consistency is formed.
Finally, spread it on the cake and decorate with the lemon zest.
