MINT

Mint is a perennial herb with very fragrant toothed leaves and small purple, pink or white flowers. There are many varieties of mint – all fragrant, shiny or fuzzy, smooth or wrinkled, bright green or variegated. However, you can always identify a member of the mint family by its square stem. Rolling it between your fingers, you will notice a pungent, delicious aroma.

THE PLANTING

Peppermints are vigorous perennials that thrive in light soil with good drainage.
Ideally, they prefer a moist but well-draining location, something like their native habitat along the banks of streams.
Most will grow in full sun or partial shade; variegated types may require some protection from direct sun.
For outdoor growing, plant one or two purchased plants (or one or two seedlings from a friend) about two feet apart in moist soil. One or two plants will easily cover the ground. Mint should grow to be 1 or 2 feet tall.
Spearmint needs to be contained or it will send your runners out and spread throughout your garden. The secret is to contain the roots of the plant. Whether in the ground or above ground, plant mint in a pot. We suggest planting each mint in a 10-inch pot with drainage holes in the bottom. You can then sink this pot into the ground or another larger container of soil.
In the garden, plant mint next to cabbage and tomatoes — in pots, again, to prevent it from spreading and robbing your crops of nutrients!

THE HARVEST

Harvesting frequently is the secret to keeping this plant at its best. Young leaves have more flavor than old ones, you can pick them as soon as they sprout. Although fresh is best and the branches will keep for a few days in water, and their leaves can be frozen or air-dried in bunches.
Just before flowering, cut the stems 1 inch from the ground. You can harvest a mint plant two or three times in a growing season, or simply harvest the leaves when you need them.
You can grow the plants indoors to get fresh leaves during the winter. If you want to dry them, it’s best to cut the leaves just before flowering. Store dried leaves in an airtight container.
