INGREDIENTS
- 1 tea cup of milk
- 1 envelope of unflavored gelatin (diluted according to package)
- 2 cans of condensed milk
- 2 boxes of sour cream
- 2 tablespoons of sugar to caramelize the molds
FOR THE SYRUP
- 2 tea cups of sugar
- 1/2 cup of hot water
METHOD OF PREPARATION
To prepare this delicious pudding, start by hydrating the gelatin according to the package instructions. Then dissolve the gelatin in the milk. Use a blender to mix the condensed milk, cream and milk mixture with gelatin until the mixture is homogeneous.
Transfer the mixture to a caramelized pudding mold or mini molds, if you prefer. Refrigerate for at least 3 hours, or overnight, until pudding is firm. Then unmold and serve this delicious dessert to your guests!
THE SYRUP

INGREDIENTS
- 1/2 package of shredded coconut flakes
- vanilla or coconut essence (optional)
- 1 can of condensed milk

- 4 gems
METHOD OF PREPARATION
Prepare the form for the pudding, separating six individual pots. Grease them with butter and sprinkle with sugar. If you prefer, make a caramel sauce by taking half a cup of sugar over high heat in a thick-bottomed pan until it melts and turns an amber color. Carefully pour the syrup into the bottom and sides of the mold or pots.
Prepare a bain-marie in an oven preheated to 200 degrees, placing boiling water in a large baking dish that will fit the puddings.
In a blender, beat condensed milk, water and egg yolks until well blended. Add the desiccated coconut to the blender and give just one pulse to mix. Distribute the pudding mass between the ramekins or put everything in the bigger shape. Place the puddings inside the baking dish with the hot water and let it bake for approximately 40 minutes for the smaller puddings and 1 hour for the larger puddings. Check water bath water and top up if it is drying up. Use a knife to test if the pudding is done, the blade should come out damp but not sticky with cream. The surface must be golden brown.
Let cool and refrigerate for a day before unmolding.
