VANILLA ICE CREAM
Preparation time: 60 minutes
Performance: 2 servings
INGREDIENTS
- 2 and a half cups of milk
- 3/4 cup of sugar
- half vanilla bean
- 4 gems
GREEN APPLE CRUMBLE
- half of a diced green apple
- 3 tablespoons of butter
- half a cup of flour
- half a cup of sugar
WALNUT FAROFA
- Half a cup of chopped walnuts
- 1 teaspoon of butter (very full)
- 1 teaspoon of sugar (very full)
The way to prepare this recipe is very simple and I am sure that if you follow it step by step you will be able to make your recipe, it will be wonderful.
METHOD OF PREPARATION
ICE CREAM
First, in a pan, heat the milk with the open vanilla bean until it boils.
And then, beat the yolks with sugar until they become whitish and then put a little of the boiled milk in the mixture of the yolks to temper them and not curd and stir well.
Soon after, put the mixture back in the pan with the rest of the milk and heat until it reaches 85°C, for the cream to thicken up to the point of napê (at which point your creams will be creamy and dense)
Then remove from the heat and transfer to a form large enough to cool quickly. The colder the freezer, the better it will be and then, when you start to freeze the ice cream mass, remove it from the freezer and hit it strongly with the fouet (hand beater) to break the little pieces of ice that formed and make the mass creamy.
That way, go back to the freezer and leave it until it freezes again. Remove and beat with the fouet, repeating this process three times, until the mass is creamy and firm at the same time.
CRUMBLE
Soon after, in a bowl, sift the sugar and flour, add the butter. Stir with your hands until you form a farofa. Place the apple in a baking dish and, on top, the farofa. Then place in a preheated oven at 180º C for 20 minutes.
FAROFA
Chop the walnuts and place in a skillet over low heat with the sugar and butter.
Now assemble the dessert: in a deep dish, place the apple crumble.
And then, with the help of a heated spoon, spread the ice cream until it becomes soft.
Then clean the spoon with hot water and make a ball with the ice cream, which should be placed on top of the crumble.
Finally, finish with the walnut farofa.
